The ‘easy’ bit here is that you prepare the batter at home just before you leave fill a seal-able air-tight plastic jar and pop it in the fridge.

Roast Sausage, Potatoes and Vegetables in Foil
A great quick meal, hearty and filling if you’ve had a full day’s walking and are too tired to spend too much time preparing and cooking. And can be eaten straight from the foil to save on washing up.
