Easy Camping Recipes – Roast Sausage, Potatoes and Vegetables in Foil

A great quick meal, hearty and filling if you’ve had a full day’s walking and are too tired to spend too much time preparing and cooking. And can be eaten straight from the foil to save on washing up.

Preparing ahead – you will need to pre-cook the sausages and par-boil the potatoes and leave to cool before packing your cool box for your trip.

For each serving cut a square of heavy-duty aluminium foil, about 30cm square (or 1 foot square in old money), and then lightly oil one side and then place in the following

Per serving:
– 1 or 2 pre-cooked sausages, cut into chunks
– A few new potatoes, halved and par-boiled
– Small red onion, chunked
– red and/or yellow bell pepper, again chunked – there’s no finesse to this meal.
– salt & pepper (optional)
– a knob of butter (optional)

You can add any or all of the following, let personal preference and experimentation be your guide:
– clove of garlic, peeled and roughly chopped
– chilli, roughly chopped
– a few fresh herbs (rosemary and thyme are my usual choice)

Fold over foil and create a seam and seal tightly to make a secure package, like a little aluminium pasty and then place either onto the BBQ grid or direct onto coals if they have burnt down and aren’t too fierce. Turn it occasionally. About 10 to 15 minutes should do it.

Having had one of these tear and lost a meal to the coals I tend to double bag it and use two sheets of foil if going straight onto an open fire.

    For any vegetarians out there you can substitute the meat sausage for a vegetarian sausage, but from experience these don’t need pre-cooking.
